Ground cloves are used in cooking, natural pain relief, food preservation, and home remedies. This warm, intensely aromatic spice shows up in kitchens worldwide, but it also has a long history as a medicinal ingredient, largely because of a powerful compound called eugenol that makes up roughly 89% of clove’s essential oil.

Cooking With Ground Cloves

Ground cloves add a warm, slightly sweet, and peppery flavor to both sweet and savory dishes. A little goes a long way. Most recipes call for just a quarter to half teaspoon because the flavor is concentrated and can easily overpower a dish.

In savory cooking, ground cloves appear in spice blends like garam masala, Chinese five-spice powder, and Caribbean curry mixtures. They’re a natural pairing with slow-cooked meats, particularly ham glazes where cloves and cider create a classic combination. Haitian soup joumou, a rich beef and vegetable soup, uses cloves alongside thyme, parsley, and Scotch bonnet chile. Ground cloves also work in curried pumpkin dishes, pickled beets, and slow-cooked onion compotes that pair well with grilled steak or pork.

On the sweet side, ground cloves are essential in gingerbread, pumpkin pie spice, and spiced holiday cookies. They show up in warm drinks like mulled wine, hot buttered rum, and café brûlot, a New Orleans coffee drink made with orange liqueur, cognac, and cinnamon. Baked goods like biscotti and spice cakes rely on ground cloves for depth alongside cinnamon, nutmeg, and allspice.

Natural Toothache Relief

Ground cloves have been used for centuries to ease dental pain, and the science behind this is well understood. Eugenol, the main active compound in cloves, blocks voltage-gated sodium channels on sensory neurons. In plain terms, it stops pain signals from traveling along the nerve, creating a localized numbing effect similar to what you’d feel from an over-the-counter oral anesthetic.

To use ground cloves for a toothache, you can make a paste by mixing a small amount of the powder with water or a carrier oil and applying it directly to the sore area. The numbness typically kicks in within minutes. Beyond the pain-blocking effect, eugenol also fights oral bacteria. It disrupts the cell membranes of common mouth pathogens like Streptococcus mutans (a major cause of cavities) and Candida albicans (responsible for oral thrush), which can help reduce infection-related pain. This is a temporary measure, not a substitute for dental care, but it’s effective in a pinch.

Digestive Support

Ground cloves stimulate the production of digestive enzymes, particularly lipase (which breaks down fats) and amylase (which breaks down starches). They also promote the secretion of saliva and gastric mucus, which helps protect the stomach lining and move food through the digestive tract more efficiently. This is why cloves have traditionally been added to heavy, rich dishes in Indian and Middle Eastern cooking. If you experience occasional bloating or sluggish digestion, adding a pinch of ground cloves to meals can help your body process food more effectively.

Antioxidant Powerhouse

Ground cloves rank among the highest of all foods for antioxidant capacity. In the USDA’s ORAC database, which measures a food’s ability to neutralize free radicals, ground cloves scored 314,446 micromoles per 100 grams, placing them at the very top of all spices and herbs tested. For comparison, most fruits and vegetables score in the hundreds to low thousands. The eugenol in cloves is the primary driver of this activity, scavenging the unstable molecules that contribute to cell damage and chronic inflammation. Even the small amounts used in cooking contribute meaningful antioxidant protection to your diet.

Natural Food Preservative

Ground cloves have real antimicrobial muscle against foodborne pathogens. Research testing clove powder against Staphylococcus aureus, Salmonella, and E. coli O157:H7 in ground meat found significant reductions in all three bacteria compared to untreated samples. In refrigerated storage tests, clove treatments extended the shelf life of ground meat from 6 days to 9 to 12 days. The most concentrated clove treatments reduced Salmonella counts by more than 4 log units and nearly eliminated E. coli entirely.

There’s a trade-off, though. While clove oil and clove extract preserved meat without affecting taste, ground clove powder at preservative-level concentrations (2.5 to 7.5 grams per kilogram of meat) altered the flavor and aroma enough that taste testers found it unacceptable. For home cooks, this means ground cloves work best as a flavor-compatible preservative in dishes where their taste is welcome, like chutneys, marinades, and pickled foods, rather than as a standalone preservation method for plain meat.

Blood Sugar and Metabolic Health

A randomized, double-blinded clinical trial involving 70 adults with metabolic syndrome found that a clove polyphenol extract taken daily for 84 days improved fasting blood sugar, post-meal glucose levels, and HbA1c (a marker of long-term blood sugar control). The extract also improved insulin resistance scores and shifted cholesterol numbers in a favorable direction: total cholesterol, triglycerides, and LDL went down while HDL went up. A synthetic antioxidant used as the comparison treatment showed no significant effect on blood sugar or cholesterol. These results suggest that the polyphenols in cloves, not just eugenol, play a role in metabolic regulation.

Skin Care Uses

The same antibacterial properties that make ground cloves effective against oral pathogens also apply to skin infections. Clove’s antimicrobial action is effective against bacteria that cause acne and fungi responsible for conditions like athlete’s foot. For topical use, ground cloves need to be mixed with a carrier oil like coconut or almond oil to prevent irritation, since undiluted clove applied directly to skin can cause burning. Test any clove mixture on a small patch of skin first and wait 24 hours before using it more broadly.

Safety Considerations

Ground cloves in the amounts typically used in cooking are safe for most people. The concern starts when cloves are used in concentrated or medicinal quantities. Clove oil, in particular, can cause severe side effects when swallowed, including seizures, liver damage, and fluid imbalances. Even topical application of clove oil to gums can cause irritation and tissue damage if used too frequently or without dilution.

There is no established safe upper limit for ground cloves as a supplement. If you’re using ground cloves beyond normal culinary amounts, start small and pay attention to how your body responds. People on blood-thinning medications should be cautious, as eugenol has mild anticoagulant properties that could amplify the effect of those drugs.
