What Is K Factor in Manuka Honey vs UMF and MGO?

KFactor is a grading system created by the manuka honey brand Wedderspoon to rate the purity and quality of their honey. Unlike other manuka honey ratings that measure antibacterial strength, KFactor focuses on pollen count and production standards like whether the honey is raw, traceable, and free of contaminants. Wedderspoon is currently phasing out KFactor in favor of the more widely recognized MGO standard.

What KFactor Actually Measures

KFactor rates manuka honey based on five “pillars” rather than a single chemical marker. Those pillars are: traceability from hive to home, raw and unpasteurized processing, freedom from antibiotics, glyphosate, and pesticides, production and packing in New Zealand, and Non-GMO Project verification. The potency within each KFactor level is determined by the manuka pollen count in the honey.

KFactor 12 represents multifloral manuka honey, meaning it comes from bees that fed on manuka flowers alongside other flower sources. KFactor 16 represents monofloral manuka honey, where bees fed predominantly on manuka flowers. A higher number signals a greater concentration of manuka pollen. Both levels are guaranteed to meet or exceed the corresponding manuka honey standards set by the New Zealand government.

How KFactor Differs From UMF and MGO

The most important distinction is that KFactor does not measure antibacterial potency. This is a significant gap, because the compound that gives manuka honey its unique antibacterial properties is methylglyoxal (MGO), and KFactor doesn’t account for it.

The UMF (Unique Manuka Factor) system, by contrast, verifies four markers: MGO for antibacterial strength, leptosperin to confirm the honey genuinely comes from manuka flowers, DHA as an indicator of shelf life, and HMF as a freshness measure. The MGO rating system is simpler, measuring just methylglyoxal concentration directly. Both UMF and MGO give you a clear picture of how potent the honey is for therapeutic use.

KFactor tells you the honey is authentic, clean, and minimally processed. It doesn’t tell you how strong it is. If you’re buying manuka honey specifically for its antibacterial properties, a KFactor number alone won’t give you that information.

Wedderspoon’s Shift to MGO

Wedderspoon has announced a transition from KFactor to the globally recognized MGO standard. Under this change, their KFactor 16 products now carry an MGO 150+ rating, and KFactor 12 products are labeled MGO 50+. The company states that its original KFactor guarantees (raw, unpasteurized, non-GMO, New Zealand sourced, contaminant-free) still apply alongside the new MGO numbers.

This shift essentially fills the gap KFactor had. You now get both the purity assurances Wedderspoon built its brand on and a standardized measure of antibacterial strength that’s comparable across brands.

New Zealand’s Official Manuka Standards

Regardless of the branding system a company uses, all honey labeled as manuka for export from New Zealand must pass government-mandated testing. The New Zealand Ministry for Primary Industries introduced its definition in 2018, and a 2023 scientific review confirmed no changes were needed.

The test requires five attributes: four chemical markers derived from manuka nectar and one DNA marker from manuka pollen. Monofloral manuka honey must contain at least 400 mg/kg of a key compound called 3-phenyllactic acid, while multifloral manuka needs at least 20 mg/kg but less than 400. Both categories must also pass a DNA test confirming the presence of manuka pollen. Honey that fails any of these attributes cannot legally be called manuka for export.

So whether a jar says KFactor 16, UMF 15+, or MGO 400+, it had to clear the same baseline government authentication before leaving New Zealand.

Which Rating System Matters Most

If you’re choosing manuka honey for everyday use as a sweetener or general food, KFactor’s purity pillars are reasonable assurances of quality. If you’re choosing it for specific health reasons, particularly its antibacterial activity, you need an MGO or UMF number. A KFactor 16 jar with no MGO information could contain anywhere from moderate to low levels of methylglyoxal.

With Wedderspoon now printing MGO values on their labels, this is becoming less of an issue. But if you see older stock labeled only with KFactor, know that KFactor 16 corresponds roughly to MGO 150+ and KFactor 12 to MGO 50+. For context, manuka honeys marketed for therapeutic use typically start at MGO 250+ or UMF 10+, so even Wedderspoon’s higher-grade KFactor 16 sits in the moderate range.
