The cocoa content is also higher, generally at least 70% cocoa solids, because a higher cocoa percentage means less room for carb-heavy fillers. - Allulose: A rare sugar with a GI of just 1. It behaves almost exactly like sugar in recipes, browning and dissolving the same way, which makes it popular in premium keto chocolate brands.
Many products combine two or more of these sweeteners to get closer to the taste and texture of real sugar. A common pairing is erythritol with stevia or monk fruit, where the erythritol provides bulk and the high-intensity sweetener rounds out the flavor.
Watch Out for Maltitol
Not every chocolate labeled “sugar-free” qualifies as keto-friendly. Maltitol is a sugar alcohol frequently used in sugar-free candy and baked goods, but its glycemic index is 35, significantly higher than erythritol or allulose. It still raises blood sugar, just less dramatically than table sugar. Products sweetened with maltitol also tend to be higher in total carbs. If you’re buying chocolate specifically for keto, check the ingredient list and skip anything that lists maltitol as a primary sweetener.
How to Calculate Net Carbs
Keto chocolate labels can look confusing because total carbohydrates include fiber and sugar alcohols, neither of which your body fully absorbs. Net carbs give you a more accurate picture of what actually affects your blood sugar.
For fiber, subtract the full amount from total carbs. For sugar alcohols, the general rule from diabetes nutrition guidelines is to subtract half the grams of sugar alcohol from total carbs. So if a chocolate bar lists 15 grams of total carbohydrates, 4 grams of fiber, and 8 grams of sugar alcohols, the math looks like this: 15 minus 4 minus 4 (half of 8) equals 7 grams of net carbs. The exception is erythritol, which many keto followers subtract entirely because almost none of it is absorbed.
