Two regulatory genes, VvMYBA1 and VvMYBA2, act as switches that turn on anthocyanin production. In red grapes, at least one of these genes works normally.

In green (sometimes called “white”) grapes, both switches are broken. VvMYBA1 is silenced by a chunk of rogue DNA called a retrotransposon that lodged itself into the gene’s promoter region, preventing it from being read. VvMYBA2 carries two separate mutations: one swaps out a critical amino acid, and the other shifts the reading frame so the cell produces a shortened, nonfunctional protein. Research published in The Plant Journal confirmed that all 55 white grape cultivars tested carried these same inactivating mutations. In other words, every green grape you’ve ever eaten descends from ancestors that lost both copies of their color-switch genes through rare, coincidental mutations.

Nutritional Differences

Side by side, a 100-gram serving of each type looks nearly identical. Red grapes contain about 86 calories and 17 grams of sugar. Green grapes come in slightly lower at 80 calories and 16.1 grams of sugar. Both provide roughly the same amounts of vitamin C (about 17 mg per cup) and vitamin K (about 23 mcg per cup). Fiber, potassium, and B vitamins are also comparable across both types.

Where they diverge meaningfully is in their antioxidant profiles. Because red grapes produce anthocyanins and green grapes don’t, the two carry fundamentally different portfolios of protective plant compounds. This matters more than the minor calorie gap.

Antioxidants and Resveratrol

Red grapes are one of the richest natural sources of resveratrol, a compound concentrated in grape skins and seeds. Dark-skinned grape varieties contain roughly 50 to 100 micrograms of resveratrol per gram of skin and seed tissue. Resveratrol has drawn attention for its potential effects on inflammation, heart health, and cellular aging, though most studies use concentrated doses far higher than what you’d get from eating grapes alone.

Green grapes contain some resveratrol too, but in significantly lower amounts. They also miss out on anthocyanins altogether. That bitterness comes partly from tannins, astringent compounds found in grape skins and seeds. But the difference is modest in the context of a varied diet. Both types provide vitamin C, vitamin K, potassium, and hydration (grapes are about 80% water). Both contain fiber and natural sugars in similar amounts.

If you enjoy green grapes more and eat them regularly, you’re better off than choosing red grapes and leaving them in the fridge. The best grape is the one you’ll actually eat.
