Pistachios rank among the top fifty foods for antioxidant potential, and they contain several protective compounds you simply can’t get from other nuts. They’re the only nut with meaningful amounts of lutein and zeaxanthin, two pigments that act as antioxidants throughout the body (and are especially concentrated in the retina, where they protect against light damage). Nearly 100% of the lutein in pistachios becomes available for absorption during digestion, which is unusually efficient for a plant compound.
Pistachios are also the only nut containing anthocyanins in their skin, the same antioxidant pigments found in blueberries and red wine. Brazil nuts are the richest food source of selenium on Earth. A single nut contains roughly 240 micrograms, which is more than four times the recommended daily intake of 55 micrograms. Selenium is essential for your body’s antioxidant defense system. It helps produce enzymes that neutralize reactive oxygen species, the unstable molecules that trigger and sustain inflammatory responses.
This extreme concentration is both the advantage and the caution with Brazil nuts. One or two per day is enough to optimize your selenium levels. Eating them by the handful, the way you might with almonds or cashews, can push you past the safe upper limit over time. Think of Brazil nuts less as a snack and more as a daily supplement that happens to come in a shell.
Pecans: Slowing the Post-Meal Inflammatory Surge
Pecans are loaded with proanthocyanidins, the most abundant type of polyphenol in the plant kingdom and the dominant non-fat bioactive compound in pecan kernels. Part of what makes nuts effective against inflammation has nothing to do with the nutrients you absorb in your stomach. When it comes to raw versus roasted, the fat and protein content of nuts remains largely stable through roasting at moderate temperatures. Roasted nuts that taste oily may have had oil added during processing rather than having changed chemically, so check the ingredient list. Unsalted and dry-roasted versions avoid added sodium and extra fat.
