What Vegetables Are Low in Fiber to Eat?

Several common vegetables qualify as low in fiber when prepared correctly, including carrots, potatoes (peeled), zucchini, cucumber (peeled and seeded), lettuce, and asparagus tips. The key threshold most clinicians use is 2 grams of dietary fiber or less per serving. How you prepare these vegetables matters just as much as which ones you choose, since peeling, seeding, and cooking all reduce the fiber your body has to process.

Vegetables That Fit a Low-Fiber Diet

Memorial Sloan Kettering Cancer Center recommends the following vegetables for people following a low-fiber protocol:

  • Well-cooked carrots (fork-tender, no skins)
  • Asparagus tips (the tender top portions only)
  • Peeled potatoes of any variety: white, red, sweet, or yellow
  • Strained vegetable juice

Beyond these, other vegetables that are naturally low in fiber per serving include peeled and seeded cucumber, well-cooked zucchini or yellow squash (peeled and seeded), iceberg or butter lettuce, and canned beets. The common thread is that these vegetables are either soft-fleshed to begin with or become very soft when cooked, with minimal tough cell walls left to challenge your digestive system.

Vegetables to avoid on a low-fiber diet include broccoli, Brussels sprouts, cauliflower, corn, cabbage, celery, eggplant, and any raw vegetables. These contain higher amounts of insoluble fiber or have tough skins, seeds, and membranes that are difficult to break down.

Why Some People Need Low-Fiber Vegetables

A low-fiber diet isn’t something most people follow by choice. It’s typically prescribed for specific medical situations. According to the Mayo Clinic, the most common reasons include narrowing of the bowel from a tumor or inflammatory conditions like Crohn’s disease and ulcerative colitis, recovery from bowel surgery, or treatment like radiation therapy that irritates the digestive tract.

In these situations, fiber can aggravate symptoms by adding bulk that inflamed or narrowed passages can’t handle easily. Choosing low-fiber vegetables lets you still get vitamins and minerals from produce without the mechanical stress on your gut.

It’s worth noting that “low fiber” and “low residue” are not the same thing, though the terms are often used interchangeably. A low-residue diet is actually more restrictive. It limits not only fiber but also certain meats and dairy products. On a true low-residue diet, the only vegetables typically allowed are bananas and peeled potatoes. A low-fiber diet gives you more flexibility with well-cooked, peeled, and seeded options.

How Cooking and Peeling Reduce Fiber

The way you prepare vegetables can be just as important as which ones you pick. Three simple techniques lower fiber content significantly.

Peeling removes the skin, which is where much of a vegetable’s insoluble fiber lives. A potato with the skin on has roughly twice the fiber of a peeled one. The same principle applies to cucumbers, zucchini, and carrots.

Removing seeds eliminates another concentrated source of fiber. This matters for squash, tomatoes, and cucumbers especially.

Cooking until fork-tender changes the fiber structure itself. Research on cruciferous vegetables shows that both steaming and boiling decrease insoluble fiber concentrations while converting some of it into soluble fiber, which is gentler on the digestive system. The longer and softer you cook vegetables, the more this conversion occurs. “Fork-tender” is the standard benchmark: if a fork slides through easily with no resistance, you’ve cooked it enough.

Canned Vegetables and Fiber

You might assume canned vegetables are lower in fiber than fresh, but the difference is surprisingly small. Research from the University of California found that for most vegetables, canning and freezing did not significantly change total fiber content. Studies on corn, peas, and green and yellow beans showed that soluble, insoluble, and total fiber stayed essentially the same after canning or freezing.

There’s one exception: when the canning process involves physical separation, like removing skins or straining, fiber does drop. And some frozen and canned green peas actually tested 25 to 35 percent higher in dietary fiber than their fresh-cooked equivalents. So don’t rely on canning alone to lower fiber. You still need to choose inherently low-fiber vegetables and prepare them properly.

Strained Vegetable Juice as an Alternative

If you’re struggling to eat enough vegetables on a low-fiber diet, strained vegetable juice is one of the easiest options. Juicing removes most of the pulp and insoluble fiber, and straining through a fine mesh takes out nearly all of what remains. Tomato juice, carrot juice, and mixed vegetable juices that have been well-strained typically contain less than 1 gram of fiber per serving.

This can be a practical way to get nutrients like potassium, vitamin A, and vitamin C without adding bulk to your digestive tract. Just watch the sodium content on store-bought versions, and look for labels that say “no pulp” or strain them yourself at home.

Keeping Nutrition Up on a Low-Fiber Diet

Restricting fiber means you’re cutting out many of the most nutrient-dense vegetables. Leafy greens, cruciferous vegetables, and legumes are all high in fiber but also packed with vitamins, minerals, and antioxidants. When those are off the table, it takes more planning to avoid gaps in your nutrition.

Focus on the low-fiber vegetables that still deliver meaningful nutrition. Peeled sweet potatoes are rich in vitamin A. Well-cooked carrots provide beta-carotene. Strained tomato juice offers vitamin C and lycopene. Peeled white potatoes supply potassium. Rotating through these options gives you a broader nutrient profile than eating the same one or two vegetables repeatedly.

Most low-fiber diets are meant to be temporary, lasting through a flare-up, a recovery period, or a course of treatment. If you find yourself on one for longer than a few weeks, it’s worth checking whether a multivitamin or specific supplements could fill any nutritional gaps that limited vegetable variety creates.
