Wheat Gluten Substitutes: Gums, Starches and More

A wheat gluten substitute is any ingredient that replicates the stretchy, binding structure gluten provides in baked goods. The best substitute depends on what you’re making: hydrocolloid gums work well in bread, starches add tenderness to cakes and cookies, and protein-based binders like eggs or flax help hold everything together. Most successful gluten-free recipes combine two or three of these approaches rather than relying on a single swap.

Gluten is a network of proteins that traps gas bubbles during rising, gives dough its elasticity, and creates the chewy texture in bread and pasta. Removing it means you need to rebuild those functions with other ingredients. Here’s how each category of substitute works and when to use it.

Hydrocolloid Gums: The Closest Structural Match

Xanthan gum, guar gum, and psyllium husk are the most common direct replacements for gluten’s binding role. These ingredients swell in liquid and form a gel that thickens dough, creates walls around gas bubbles, and prevents those bubbles from collapsing during baking. After the bread comes out of the oven, they stabilize the crumb structure and slow staling by binding water and preventing starch from hardening.

Each gum behaves a little differently. Xanthan gum maintains texture well during storage, making it a strong choice for bread you plan to keep for a few days. Both xanthan and guar gum decrease dough extensibility, meaning they create a firmer, tighter crumb. If you need a softer, more flexible result, hydroxypropylmethyl cellulose (often listed as HPMC on packaging) increases extensibility instead.

For substitution ratios, you generally need about twice as much guar gum as xanthan gum to achieve a similar effect: 1 teaspoon of guar gum replaces roughly ½ teaspoon of xanthan gum. In bread recipes, you’ll typically use about 1 teaspoon of xanthan gum per cup of gluten-free flour. For cookies and cakes, which need less structure, drop that to about ½ teaspoon per cup.

Digestive Considerations

Guar gum deserves a note of caution. Animal research has shown that diets containing guar gum can alter gut bacteria activity, increase intestinal inflammation, and raise susceptibility to colitis. Mice fed guar gum experienced higher rates of diarrhea and rectal bleeding compared to controls, along with elevated inflammatory markers. This doesn’t mean a teaspoon in your bread will cause problems, but if you have inflammatory bowel disease or a sensitive gut, xanthan gum or psyllium husk may be gentler options.

Starches That Add Structure and Softness

Starches don’t replace gluten on their own, but they’re essential supporting players in almost every gluten-free flour blend. Tapioca starch, potato starch, and cornstarch each contribute different textures. Potato starch forms a harder, stickier, chewier gel than corn or tapioca, and it thickens at lower concentrations. That makes it useful when you want more body in bread or pizza dough. Tapioca starch creates a lighter, more tender crumb and adds a slight chewiness without heaviness, making it a better fit for cakes, muffins, and softer baked goods. Cornstarch falls somewhere in between.

Most gluten-free flour blends use a ratio of about 2 parts base flour (rice flour, oat flour, sorghum flour) to 1 part starch. Combining two different starches often gives better results than using one alone, because you get both the structural firmness and the tender crumb.

Egg and Flax Binders

Eggs are one of the most effective gluten substitutes in baking because their proteins coagulate during heating, creating a firm internal structure. In recipes that already include eggs, increasing by one extra egg can partially compensate for missing gluten. This works especially well in quick breads, muffins, and pancakes.

For a vegan or egg-free option, a flax egg replaces one regular egg at a 1:1 ratio. Mix 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for about 5 minutes until it thickens into a gel. The soluble fiber in flax creates a binding effect that holds batters together.

One important limitation: flax eggs provide binding but not the protein structure that real eggs do. If your recipe is already gluten-free, using flax eggs on top of that removes two sources of structure at once. The result is often flat, crumbly baked goods. Oat flour is one of the few gluten-free flours with enough protein to compensate. If you’re working with rice flour or another low-protein base, stick with real eggs or add extra starch and gum to make up the difference.

Aquafaba for Foaming and Emulsifying

Aquafaba, the liquid from canned chickpeas, has become a popular binder in gluten-free and vegan baking. Its functional properties come from a mix of water-soluble proteins, polysaccharides, and natural surfactant compounds called saponins. The proteins allow it to foam (similar to whipped egg whites), while the carbohydrates stabilize that foam so it doesn’t collapse.

About 55 to 74 percent of aquafaba’s dry matter is carbohydrates, with protein making up only about 0.85 to 1.5 percent in its liquid state. That low protein content means aquafaba excels at creating airy, light textures but doesn’t provide the strong structural binding of eggs or gluten. It’s best suited for meringues, angel food cake, mousse, and recipes where lift and lightness matter more than chew. Three tablespoons of aquafaba replaces one whole egg, and two tablespoons replaces one egg white.

Combining Substitutes for Best Results

No single ingredient does everything gluten does. The stretchy elasticity, gas retention, moisture binding, and structural firmness that gluten provides all come from different properties, and replacing them requires layering multiple substitutes. A well-formulated gluten-free bread, for example, might use rice flour as a base, tapioca and potato starch for texture, xanthan gum for gas retention and crumb stability, eggs for protein structure, and extra water to hydrate all those components properly.

Water levels matter more in gluten-free baking than most people expect. Hydrocolloid gums need adequate water to form their gels, and the optimal amount varies depending on which gum you use and what flour blend you’re working with. Research on rice and corn bread found that water levels needed to be specifically optimized for each type of hydrocolloid to achieve good bread volume. If your gluten-free bread is dense or gummy, adding a few tablespoons more water to the dough is often the fix.

As a starting framework for yeast bread: use a gluten-free flour blend with built-in starch, add 1 teaspoon of xanthan gum per cup of flour, include at least one egg, and increase liquid by about 25 percent compared to a wheat-based recipe. For cookies and cakes, reduce the xanthan gum to ½ teaspoon per cup and focus more on starch and fat for tenderness. For anything that needs to be light and airy, whipped aquafaba can replace some or all of the eggs to create volume without density.
