Deli meat carries a risk of Listeria contamination, and pregnant women are significantly more vulnerable to this bacterial infection than the general population. The concern isn’t about the meat itself but about a specific pathogen, Listeria monocytogenes, that can survive refrigeration temperatures and cross the placenta to infect the developing baby. While the actual odds of getting sick are low, the consequences during pregnancy can be devastating.
What Makes Listeria Different From Other Bacteria
Most foodborne bacteria stop growing or die in cold environments. Listeria is unusual because it thrives at refrigerator temperatures, which is exactly why deli meat poses a problem. The meat sits in refrigerated display cases for days, and Listeria spreads easily among deli equipment, surfaces, hands, and food. Even meats that were cooked or processed safely during manufacturing can become contaminated afterward by touching surfaces in the production facility.
Counter-sliced deli meat tends to carry higher risk than factory-sealed packages because of the additional handling and shared slicing equipment. But no ready-to-eat deli product is completely free of risk, since contamination can happen at multiple points in the supply chain.
Why Pregnancy Increases the Risk
During pregnancy, the immune system deliberately dials itself down in a specific way. The body expands a type of immune cell called regulatory T cells to prevent the mother’s immune system from attacking the developing fetus, which is genetically foreign. This expansion is essential for sustaining the pregnancy, but it creates a gap in the body’s defense against certain pathogens. Research from the USDA has shown that susceptibility to Listeria infection during pregnancy is directly tied to this expansion of immune-suppressing cells.
In practical terms, this means a pregnant person who eats contaminated deli meat may develop an infection that a non-pregnant person’s immune system would have fought off. The mother might feel only mild flu-like symptoms, or nothing at all, while the bacteria crosses the placenta and reaches the baby.
What Listeria Can Do to a Pregnancy
The stakes are what make this food safety issue so serious. Listeriosis during pregnancy can cause miscarriage, stillbirth, premature delivery, and infant death. A mother might experience nothing more than a low fever and body aches while the infection is already affecting the fetus.
Babies who survive a Listeria infection can face severe long-term consequences. Late-term fetuses exposed to the bacteria may develop intellectual disability, paralysis, seizures, blindness, or damage to the brain, heart, or kidneys. Newborns with the infection are at risk for blood infections and meningitis. Even low-birth-weight delivery is a documented outcome.
The cruel irony is that the same immune shift protecting the pregnancy from rejection is what leaves both mother and baby exposed. When the body does eventually mount a defense against the infection, that immune response can itself fracture the tolerance maintaining the pregnancy, potentially causing fetal injury or pregnancy loss.
Heating Makes Deli Meat Safe
The CDC’s guidance is straightforward: avoid eating deli meat cold, or reheat it to an internal temperature of 165°F (steaming hot) before eating. At that temperature, Listeria is killed reliably. This applies to all deli meats, cold cuts, and hot dogs.
If you’re craving a sandwich, heating the meat in a skillet, oven, or microwave until it’s visibly steaming solves the problem. A turkey sub toasted until the meat is hot throughout is a different product, from a safety standpoint, than one served cold from the deli case. The key is that the meat needs to reach temperature all the way through, not just feel warm on the outside.
Beyond Bacteria: Nitrates in Processed Meat
Listeria gets most of the attention, but deli meats also contain nitrates and nitrites as preservatives, which carry their own concerns during pregnancy. These compounds may interfere with the development of fetal hemoglobin (the protein that carries oxygen in blood) and have been linked to anemia, premature labor, fetal growth problems, and neural tube defects. The evidence on nitrates is less definitive than the Listeria risk, but it’s another reason many providers suggest limiting processed meat intake during pregnancy rather than just heating it and calling it safe.
Which Foods Carry Similar Risks
The same logic that applies to deli meat extends to other ready-to-eat refrigerated foods. Soft cheeses made with unpasteurized milk, refrigerated smoked seafood, and pre-made salads from deli counters all share the same vulnerability to Listeria contamination. The common thread is foods that are eaten without further cooking after spending time in refrigerated storage where the bacteria can multiply.
- Hot dogs: Safe only if reheated to steaming before eating
- Soft cheeses: Safe if made with pasteurized milk (check the label)
- Smoked seafood: Safe if cooked into a dish, not eaten cold
- Pre-packaged deli salads: Higher risk because of handling and cold storage
Fresh-cooked meats you prepare at home and eat immediately don’t carry this risk, because the cooking kills any Listeria present and there’s no extended refrigeration period for recontamination. The issue is specifically with foods that sit at cold temperatures in a ready-to-eat state for days.
