Why Do We Drink Cow Milk and Not Human Milk?

Humans drink cow milk instead of human milk for reasons that are practical, biological, and deeply historical. Human milk is perfectly designed for human infants, but it’s produced in small quantities, only during a narrow window after childbirth, and its composition is tailored for slow-growing baby brains rather than adult nutritional needs. Cows, on the other hand, produce large volumes of milk daily, are easy to domesticate, and have been selectively bred for thousands of years to do exactly that.

How Cow Milk Became a Human Food

Before about 10,000 years ago, virtually no one drank milk past infancy. The shift began when early farmers and pastoralists in western Europe started living alongside domesticated cattle. Artwork from the tomb of Methethi in Egypt, dated to around 2350 BC, depicts an ancient Egyptian milking a cow, showing that dairy had become part of daily life by that point.

But drinking milk and actually digesting it were two different things. All mammals naturally stop producing lactase, the enzyme that breaks down the sugar in milk, after weaning. The genetic mutation that allows humans to keep producing lactase into adulthood, called lactase persistence, first appeared in southern Europe around 5,000 years ago and became more common in central Europe around 3,000 years ago. People who carried this trait had a survival advantage: milk was a reliable, calorie-dense food source that didn’t require slaughtering the animal. Over generations, the trait spread through populations that kept cattle.

Today, about 35% of human adults worldwide can fully digest lactose. Lactase persistence is most common among people of European ancestry, as well as certain African, Middle Eastern, and South Asian groups. In much of East Asia, Southeast Asia, and Indigenous populations in the Americas, lactose intolerance remains the norm. This global pattern maps almost perfectly onto which cultures historically raised dairy animals.

The Practical Problem With Human Milk

A lactating human produces roughly 750 to 1,000 milliliters of milk per day, just enough to feed one infant. A dairy cow produces 25 to 40 liters per day. That difference alone makes cow milk the only viable option for feeding populations. You’d need dozens of lactating women to match the output of a single cow, and human lactation requires pregnancy first, making it biologically impossible to scale.

There’s also the question of demand. Adults need far more calories and nutrients than an infant, so the small volumes of human milk available would barely register as a food source. Cow milk became the dominant choice not because it’s nutritionally identical to human milk, but because cows are docile, large, and extraordinarily productive. Goats, sheep, camels, yaks, and water buffalo fill the same role in other parts of the world, depending on which animals thrived in a given environment.

The Two Milks Are Built for Different Bodies

Human milk and cow milk look similar but have strikingly different compositions, each fine-tuned for the species it’s meant to nourish. The core difference comes down to protein. Cow milk contains roughly three times as much protein as human milk, and the type of protein is different too. Cow milk is casein-dominant, with an 80:20 ratio of casein to whey proteins. Human milk flips that ratio to 40:60, making it whey-dominant. Whey proteins are softer, easier to digest, and better suited to a human infant’s immature gut.

The mineral content tells a similar story. Cow milk has about three times as much sodium and potassium as human milk, four times as much calcium, and six times as much phosphorus. That heavy mineral load makes sense for a calf, which needs to build a massive skeleton quickly. A newborn calf roughly doubles its birth weight in about 50 days. Human infants take four to six months to double theirs. Human milk prioritizes brain development over rapid bone and muscle growth, delivering higher concentrations of specific fatty acids and sugars that support neural wiring.

Cow milk also contains significantly higher levels of growth-promoting hormones. Bovine colostrum, the first milk a cow produces after birth, contains around 870 nanograms per milliliter of IGF-1, a hormone that stimulates cell growth and bone development. Even mature cow milk carries about 150 nanograms per milliliter. These growth factors are part of why calves grow so fast, and they’re one reason pediatricians advise against giving whole cow milk to infants under 12 months.

Why Cow Milk Is Harmful to Young Infants

The very qualities that make cow milk useful for adults and older children make it problematic for babies. The high protein and mineral load puts stress on an infant’s kidneys, producing a urinary concentration roughly twice that seen in breastfed infants. Under normal circumstances, a healthy baby’s kidneys can handle this extra load. But if the infant becomes dehydrated from vomiting, diarrhea, or heat, the kidneys may not have enough free water to flush the excess minerals, creating a dangerous situation.

The high phosphorus in cow milk can also interfere with calcium regulation in newborns, sometimes triggering muscle spasms in the first weeks of life. And cow milk is low in iron compared to human milk, increasing the risk of anemia in infants who rely on it as their primary food. These problems disappear in older children and adults, whose kidneys, digestive systems, and nutritional needs are completely different from a newborn’s.

Why Adults Don’t Drink Human Milk

Beyond the supply problem, there’s no nutritional reason for adults to seek out human milk. Its calorie density is similar to cow milk (roughly 60 to 70 calories per 100 milliliters), but its lower protein and mineral content means it’s less useful for adult dietary needs. The immune factors in human milk, including antibodies and specialized sugars that feed beneficial gut bacteria, are tailored for infants whose immune systems are still developing. Adults already produce their own antibodies and have established gut microbiomes.

Cultural norms play a role too. Every human society draws lines around which foods are acceptable for which age groups, and breastfeeding is universally understood as something for babies. Once weaning occurs, the expectation in virtually every culture is that dairy needs, if any, come from animals. This isn’t arbitrary. It reflects thousands of years of practical experience: animal milk is abundant, storable, and can be transformed into cheese, yogurt, butter, and other products that last for weeks or months. Human milk can’t fill any of those roles at scale.

Not Everyone Drinks Cow Milk

It’s worth noting that cow milk consumption is far from universal. Roughly 65% of the world’s adult population loses the ability to digest lactose after childhood, and many cultures never adopted dairy as a staple food. In East and Southeast Asia, fermented soy products, coconut milk, and other plant-based foods historically filled the nutritional role that dairy plays in Europe. In parts of Africa and the Middle East, goat and camel milk are more common than cow milk.

Even in dairy-heavy cultures, fermented products like yogurt and aged cheese are often better tolerated than fresh milk because the fermentation process breaks down much of the lactose. The global picture of milk consumption is far more varied than the carton in your refrigerator might suggest. Cow milk dominates in the West largely because European agricultural traditions, and the genetic adaptations that came with them, spread globally through colonization and trade.
