Why You Shouldn’t Eat Bass: Mercury, Toxins & More

Bass carry higher levels of mercury and industrial pollutants than many popular fish, and freshwater bass in particular can accumulate enough contaminants to pose real health risks with regular consumption. That doesn’t mean bass is never safe to eat, but there are several compelling reasons to limit it or choose other fish instead, depending on the species, where it was caught, and how often you eat it.

Mercury Builds Up in Bass Flesh

Bass are predators. They eat smaller fish, which ate even smaller organisms, and mercury concentrates at each step of that food chain. Saltwater bass (including black sea bass, striped bass, and rockfish) average about 0.167 parts per million of mercury. Chilean sea bass runs considerably higher at 0.354 ppm, putting it in the same range as canned albacore tuna. For context, salmon averages 0.022 ppm and shrimp just 0.009 ppm.

Freshwater bass tends to be worse. A study of largemouth bass in a Florida lake found mercury concentrations in muscle tissue ranging from 0.16 to 1.10 ppm, with an average of 0.59 ppm. That average alone exceeds Florida’s health advisory threshold of 0.50 ppm for limited consumption. The bigger and older the fish, the more mercury it contains. Bass tracked from youth showed mercury levels climbing from 0.05 ppm at roughly an inch long to 0.32 ppm by age two, and continuing to rise from there. That trophy-sized largemouth you’re proud of catching is almost certainly the most contaminated fish in the lake.

PFAS and PCBs Add to the Problem

Mercury isn’t the only concern. Freshwater bass also accumulate persistent industrial chemicals, particularly PFAS (sometimes called “forever chemicals”) and PCBs, which were banned decades ago but remain stubbornly present in lake and river sediments. These chemicals don’t break down easily in the environment or in your body.

National monitoring data from U.S. rivers and streams shows that predator fish, the category bass falls into, consistently exceed EPA risk screening levels for PFAS even among people who eat fish just once a month. PCBs tend to exceed safe thresholds for people eating fish weekly or more often. What makes this particularly concerning is that mercury, PCBs, and PFAS can act together. Research suggests these endocrine-disrupting chemicals display unpredictable effects at low doses, meaning the combination may be more harmful than any single contaminant alone, especially for developing children.

Freshwater Bass Often Taste Muddy

Beyond safety, there’s a practical reason many anglers throw bass back: they frequently taste like mud. This isn’t just poor preparation. It’s caused by compounds called geosmin and 2-methylisoborneol, which are produced by algae and cyanobacteria in freshwater systems. These chemicals absorb into the fish’s flesh and give it a distinctly earthy, swampy flavor that cooking doesn’t fully remove.

Largemouth bass are especially prone to this. Fish caught from warm, stagnant, or nutrient-rich water tend to taste the worst. Bass from cold, clean, moving water taste better, but even then, most people find them bland compared to saltwater fish or freshwater species like walleye and trout. If you’re eating fish for enjoyment, bass is rarely the best option on the plate.

Microplastics Are Widespread in Bass

A study of fish from the Mississippi River found microplastics in about 13% of largemouth bass sampled. That might sound low, but a separate study of largemouth bass in Illinois drinking water reservoirs found microplastics in 100% of the fish tested. The difference likely comes down to local conditions: bass in more polluted or developed waterways swallow more plastic particles. The long-term health effects of eating microplastics are still being studied, but this is one more thing bass accumulate that salmon and shrimp largely don’t.

Keeping Large Bass Hurts the Ecosystem

If you’re a catch-and-release angler wondering whether to keep a big bass for dinner, the ecological argument is straightforward. Only a tiny fraction of bass in any lake survive to age five or six. Those large fish are the primary breeders, and removing them has an outsized effect on the population. Texas Parks and Wildlife specifically encourages releasing trophy bass because they’re the fish responsible for maintaining healthy numbers in a lake. Eating smaller bass is less damaging ecologically, but smaller bass also happen to be leaner, less flavorful, and still carry meaningful contaminant loads.

Some Bass Are Safer Than Others

Not all bass carries the same risk. The FDA classifies black sea bass as a “Best Choice” fish, meaning it’s low enough in mercury for pregnant women and children to eat two to three servings per week (a serving being 4 ounces for adults). Striped bass from the ocean and Chilean sea bass fall into the “Good Choice” category, safe at up to one serving per week during pregnancy.

Freshwater bass is a different story. The FDA removed freshwater bass from its commercial fish tables entirely because it isn’t sold commercially, but state health departments issue their own advisories for locally caught fish. These vary dramatically by lake and region. A bass from a remote mountain reservoir may be perfectly fine to eat occasionally, while one from an urban lake near industrial sites could carry contaminant levels several times higher than any store-bought fish.

If you do eat freshwater bass, check your state’s fish consumption advisory for the specific body of water. Trim the skin, belly fat, and dark lateral line meat before cooking, since fat-soluble contaminants like PCBs concentrate in fatty tissue. And cook it thoroughly: proper heat kills the parasites (tapeworms, roundworms, and flukes) that can infect humans through raw or undercooked freshwater fish.
